2 + 1 egg yolk
120 g of sugar
200 g flour
1 teaspoon baking powder
125g butter
1 rum cap
175g candied melon
1 egg white for meringue
30 g sugar for the meringue


In a bowl or in a food processor bowl: beat the eggs with the sugar and blanch the mix. then gradually add the flour with the yeast and yogurt.
Melt the butter in the microwave, then add it to the preparation and rum. Beat well to have a homogeneous mixture.
Cut the candied melon into small cubes and add them to the dough. mix. fill small boxes to muffins or cupcakes, or silicone muffin cups 2/3 full. bake 12-15 minutes at 180 ° C (preheated oven) time to adjust to the size of the boxes (mine were small by compared with a muffin pan). meanwhile, beat the white until stiff and add the sugar at once and still beat a few moments for the white makes the “bird beak”. put the meringue in a pocket socket. remove the muffins from the oven and decorate with meringue. return to oven 5 min by monitoring the color of the foam that must be colored slightly. let cool and enjoy!

verdict : I loved it! and children too. By cons, you have to eat the same day, otherwise the meringue becomes sticky and elastic. if we want to keep for the next day, it is better to avoid all the meringue!
